Meatloaf... its what's for dinner!


Though I grew up a vegetarian, my mom always cooked meat things for my dad, and meatloaf was one of the dishes I loved. It’s tasty, filling and approachable, especially for someone who isn’t used to a lot of meat, because there is no clue as to what animal it was. It’s just a loaf. Of goodness. It’s fun to mix up with your hands, it’s delicious right out of the oven, and also nice cold on a sandwich. It is an all-purpose food and modelling material!

I have indeed sampled and experimented with other loaves, like the Super Hippie mushroom-lentil loaf so popular in Berkeley and other communal living hot spots, and if nicely spiced (and if there is some fat content), some are actually not bad. I’ve also made the quintessential mid-century style meatloaf (see 1959 General Foods Cookbook) which derives its flavor from a packet of dry soup or dressing mix, and might be topped with freeze-dried onions! My mom’s recipe (see my hand-copied notes, written at age 10, above) was a somewhat gourmet mix of several meats and traditional Italian spices. If done thoughtfully, one can create a loaf out of just about anything, meat or otherwise. I’ve begun, lately, to treat meatloaf a bit the way I treat quiche: I believe I can throw just about anything in, and it will be good. That thinking has given rise to my general weekday meal-planning strategy: my favorite formats being 1) quiche 2) salad 3) soup and 4) meatloaf. I pretty much rotate those 4 and use whatever is fresh, leftover, given to me by neighbors or otherwise discovered  in my fridge, to create one-dish suppers that I will also enjoy the day after for lunch.

A very traditional version from the 50s


Carrie’s Theory of Meatloaf: Basically, mix up some ground meat, chopped veg, some kind of binding agent (bread crumbs or oatmeal are typical), and a liquid like egg, cottage cheese or milk. Add a member of the Allium family (onion, leek, scallion, garlic), add a little spice (oregano, basil, Worcestershire sauce), form into a loaf, and bake. This can be topped with tomato paste, basted with wine or chicken stock, or can be left plain to firm into shape in a medium oven (350-375) for somewhere between 45-60 min and then fill er up! For serving, you can try something fancy like a drizzle of tomato sauce (aka catsup) or a sprig of mint, but don’t try too hard – it’s meatloaf : not pretty, but pretty darn tasty.

Today’s loaf is a turkey and veg creation, based loosely on a modern recipe:

1 lb ground turkey
1 egg
1 cup panko breadcrumbs
1 cup sliced mushrooms
½ chopped green bell pepper
½ chopped onion
Worcestershire sauce
Salt & pepper
Tomato paste to top; Red wine to baste


Bake as suggested above (350-375 for 45-60 min)

and enjoy with a glass of the red wine you used to baste. #nom

Lazy Paella

How much do you love the 70s/80s? Remember how we were supposed to Have It All? As a little girl, I very clearly knew I was going to have a Career and work in an Office and have fabulous Work Outfits, but also come home from said Career and Cook Fabulous Meals and maybe also Be an Opera Singer or Photographer or something Amazing, you know, in my Spare Time. Perhaps you saw the same commercial for Enjoli? Perhaps you, like me, are still trying to figure out how to make it all work… or at the very least, how to use hot rollers…

 Anyhow, in my quest for self-actualization (aka dinner), I pulled out my copy of the brilliant 1974 lifestyle guide / cookbook that is Better Homes and Gardens “After Work Cookbook”  and found this tasty-looking dish in the “make-ahead main dishes” section. I’d never made paella, and in fact I thought it was the kind of thing you would have to actually Be from Spain to make, and that it would take Hours… but what REALLY attracted me was the Dansk casserole in the picture. Like, Ohmygod, I said (because the 80s were eclipsing the 70s at that moment), my MOM has that dish! I can make this!

Oh no, conflicted – the Dansk casserole dish was WAY too big – come on, I’m only feeding two people here! Fortunately, I had another Dansk vessel to substitute: my Kobenstyle paella pan. Saved!


 As I assembled the dish one night after dinner (to heat and eat the following, as instructed), I told my daughter about eating paella in Spain and how terrified I was of all the tiny, beautiful sea creatures that dotted the massive bowl of saffron rice, and how I picked around them, eating only the rice and carrot pieces because I didn’t know how to get into any of the shells, and because octopi are Just Too Chewy. (See, vegetarians, this is what you are doing to your children – turning them into socially awkward eaters who can’t get the hang of seafood till they turn 30!) My daughter said not to put in any shrimp or she wouldn’t try it. Also, canned mushrooms? Gross. I used fresh, and lightly sautéed them in butter. Because butter always wins.



The other thing is, I just used what they now market as “chicken tenders” because I’m still not an expert at breaking down chickens. And because I was trying to use less fat, I steamed the chicken bits. Tasty, but I cannot claim they are attractive in any way. I see now that I should have perhaps gone heavier with the paprika for color. Forgive the food styling, or lack thereof, which just proves that you can’t actually have it all. Rats.

I used onion soup mix, because the recipe told me to be "Lazy" and do that, but if I were to make this again, I’d use garlic and onions, like real ones, and maybe some oregano. Oh and what the heck is saffron rice? Since I’d never heard of it, I dumped in a teeny bit of real saffron because I hear that’s how they make it in Spain (where they also often use Land Snails, but that’s another story entirely!).

So I enjoyed finally using my paella platter, but I can’t say this was the Best Thing Ever. I do think it needed the shrimp, and they need to be spicy. I’m thinking about variations, and about the Dansk casserole and what to make in that one. Oh, and I’m still singing the Enjoli commercial because some myths just simply refuse to die. 



1 3-pound ready-to-cook broiler-fryer chicken, cut-up
2 Tbsp. cooking oil
1 ½ cups chicken broth
8 ounces shelled shrimp
1-8 ½ ounce can peas, drained
1 6-ounce package saffron rice mix
1 3-ounce can sliced mushrooms, drained
½ envelope onion soup mix (1/4 cup)

Advance preparation: brown chicken in oil. Season with salt and pepper. Mix remaining ingredients; spread in 3-quart casserole. Top with chicken. Sprinkle with paprika, if desired. Cover; chill ip to 24 hours.

Before serving: Bake, covered, at 350 degrees about 1 ¼ hours. Makes 4 servings.

Children's Favorite Casserole








There is nothing easier to throw together after a long day than a casserole, and the League of Women Voters of Illinois knew this back in 1971 when they published this chic little “Hasty Lady” Cookbook. Filled with quick and tasty recipes, it also gives helpful tips, such as this gem:  “No time-saving device beats a well-trained 12-year-old”. SOLD!

Lots of yummy-looking recipes in here, but good LORD, there is a recipe for a casserole specifically For Children, made with BEER? I know, I know, the alcohol is cooked out… it just seems so funny! I do cook with booze all the time, and who doesn’t love a casserole?  Even though the “cheese mixture” had me a liiiiiittle grossed out, I decided to give it a try. 

Turns out, sure – it’s easy to whip up, and fairly tasty. It wasn’t my own child’s favorite, though, because I think, even at eight, she prefers champagne.


Children’s Favorite Casserole

1 lb. ground beef
1 Tbsp oil
2 8 oz. cans tomato sauce
1 6 oz.  can tomato paste
1 cup beer
1 tsp salt
½ tsp Tabasco
½ tsp. oregano
1 cup cottage cheese
8 oz. cream cheese
½ cup sour cream
1 green pepper, chopped
8 oz. broad noodles, cooked and drained


Brown beef in hot oil. Add tomato sauce and paste, beer, salt, Tabasco , and oregano. Cook 10 minutes and remove from heat.

Mix cottage cheese, cream cheese, sour cream, and green pepper in a separate bowl.

Spread half the noodles over bottom of a greased 2 quart casserole or lasagna dish. Cover with cheese mixture, then with remaining noodles. Pour beef sauce over top.

Bake at 350 for 35 minutes.

Serves 4 heartily.  Easy to double recipe. Can be made night before of frozen before baking.

Frito Pie

 
 
 
Being a child of the 70s and raised by an “Earth Mother” who did not allow processed foods of any kind, naturally I gravitated towards things like Fritos and other delightful snack foods, but usually as something I snuck and ate in my car or late at night. Ironically, it was my own mother who gifted me this very cookbook (“Carrie – Happy Easter 1993 Love, Mama”) and thus helped me learn to incorporate those “forbidden foods” into perfectly acceptable company dinners.

Recently I found myself with a surplus of chili (leftover from a campout with a Hillbilly theme, if you must know) and was too tired after the weekend to cook a meal. I didn’t want just leftovers, and my friends were shouting Frito Pie! Frito Pie! OK I have to admit I’d never heard of such a thing, but I knew right where to turn. Thank you, mom, for the book that teaches me to cook in ways that you never did.

Fritos brand corn chips were created by Texan Elmer Doolin sometime around 1932. (See? Vintage food, or course I love them. – CS) Beginning with a formula purchased from a Mexican cook, adapted from the authentic corn tortilla, Doolin parlayed his snack business into a national phenomenon.  Fritos brand Corn Chips Chili Pie, invented by Doolin’s mother, Daisy, is a baked dish of corn chips, chili, onions and cheese that soon became the Southwest’s equivalent of the tuna noodle casserole. The Walkabout (aka “Frito Boats” – CS), created by spooning chili, cheese and onions into an opened snack-size bag of Fritos brand Corn Chips, is eaten on the hoof with a spoon and is still enjoyed at drive-ins, rodeos, state fairs and the like. (“The Back of the Box Gourmet”, Michael McLaughlin 1991)

 Basically, you throw chili (be it leftover or a can) into a casserole with Fritos, onions and cheese, and bake it. So Easy! So Good! Please note, though, that as much as I love to sneak junk food, I will not and cannot eat American Cheese, so I used cheddar. See, mom, at least some of what you taught me stuck!

 

CHILI PIE CASSEROLE aka “Frito Pie”

3 large cups Fritos brand Corn Chips, divided

1 large onion, chopped

1 cup grated American cheese, divided

1 19-oz can chili

Spread 2 cups Fritos brand Corn Chips in a baking dish. Arrange chopped onion and half of the cheese on top of the corn chips. Pour chili over the onions and cheese. Top with remaining corn chips and cheese. Bake at 350 for 15 to 20 minutes or until hot and bubbly. Makes 4 to 6 servings.

Pork Chop Casserole / Buttered Carrots and Celery





1959’s “The Electric Cookbook” was “your complete guide to cooking electrically” and it sure is a good thing I have it, ‘cause in my apartment, I have an electric stove. Now, I was raised cooking with gas, and I greatly prefer it, but I’ll leave off that particular tirade for the moment, and be glad that as long as I must use an electric range, I have a guide. My guide, in fact, tells me that perhaps this whole “electricity” thing is gonna be huge: “For the homemaker, electricity takes the “work” out of housework…Tireless electric servants do most of the work, affording more time for the fun of creative cooking.”

SO! That explains how cooks in the 50s had so much time to come up with all the TOTALLY BIZARRE and INEDIBLE concoctions I encounter in vintage recipe books. Anyhow, there is something completely sensible about this book that I just love. Basically, you decide which electric appliance you are going to use (Roaster? Broiler? Electric Skillet?) and then the book presents an entire menu, all to be cooked at once, at the same temperature for the same amount of time. Genius!

And, happily, THIS RECIPE TASTES GOOD. And in fact, it is one I had been taught to make by the mother of an old boyfriend (by the way, moms always LOVED me because I wanted to learn all their recipes and hang out in the kitchen with them rather than trying to sneak off with the boyfriend or smoke cigarettes. OK, enough of the goody-goody show!). She called hers “White Trash Casserole”, and it was essentially the same thing, with the addition of sautéed onion and garlic added to the canned soup. I always add in sliced fresh mushrooms (sautéed), and organic “healthy” mushroom soup, when I’m not using Campbell’s for the whole “Andy Warhol” effect. So I already knew the pork chops would be yummy. But I had no idea the carrots and celery would – and it turns out that my daughter went bonkers over them and asked for them again the next night! There was a third element to the menu, but I ran out of time so I’ll have to try the Steamed Devil’s Food Pudding another time. Probably the next time I make these yummy pork chops!


Pork Chop Casserole

Temperature: 375
Time: 50 minites
Serves: 6

Preheat roaster to 375 degrees. Trim excess fat from 6 loin chops; salt and pepper; brown on both sides in skillet; place in meat dish. Combine 10 ½-ounce can cream of mushroom soup, ¼ cup water; pour over chops.

Buttered Carrots and Celery

Temperature: 375
Time: 50 minutes
Serves: 6

Peel 4 or 5 medium carrots; cut in lengthwise quarters. Cute celery in 2-inch pieces to make 1 ½ cups. Place vegetables in covered dish. Add ½ cup water, 1 teaspoon salt, and 2 tablespoons butter. Cover to cook.

Wild Rice Casserole




How could anyone resist a book called The Total Woman Cookbook? Actually, at first I just wasn’t sure what to make of it until I read all about Ms. Marabel Morgan, who, it turns out, became a women’s motivational speaker in 1970 after sorting out troubles in her marriage, and wrote a best seller called “The Total Woman”. Well, she can cook, too, so next came a cookbook, (in 1980) which is subtitled the “Handbook for Kitchen Survival”. Instead of being organized by ingredient, the recipes are set out as to what purpose they serve: The Boss is Coming for Dinner, Ho-Hum Tuesdays, Unexpected Dinner Guests, and one for kids called Rainy Day Projects (sounds messy to me, get out the wipes!).

Marbel Morgan is a crack up, quoting from the Bible as well as discussing sex between recipes. (I guess that makes her the Total Woman!) I actually have added her first book, The Total Woman, to my “to read” list (especially if I come by it for a quarter at a garage sale, the way I source most of my books.) but in the mean time, I am happy to work through her quite excellent recipes, whether or not I use them as she has intended. For instance, I made this wild rice casserole from “International Flair” (which I guess means side dishes that don’t convey any particular message) along with her marinated flank steak from the chapter entitled “Time for Romance”, but I served them to my daughter, simply because I was in the mood for steak and there had been a sale on flank steak! I guess what I’m saying is, I don’t always need to “say it with steak” – sometimes it’s just dinner.

The wild rice casserole was a surprise hit with my daughter, who even pointed out that she liked the difference in texture between the rice, mushrooms and the almonds, and I’ve made it several times since, along-side chicken, fish, and yes, steak. I left out the canned water chestnuts, though, and used fresh mushrooms rather than canned. I also used a bizarre but delicious black/purple specialty rice I found called “Forbidden Rice”, and spent the entire time cooking cracking myself up comparing it to that other forbidden: The Lambada, the 80s phenomenon, called The Forbidden Dance.

Wild Rice Casserole

4 Tbsp butter
1 cup wild rice
½ cup slivered almonds
2 Tbsp green onions or chives
1 tsp soy sauce
1 5-ounce can water chestnuts, sliced
3 4-ounce cans mushrooms, drained
3 cups hot chicken broth

1. Preheat oven to 350 degrees. Put all ingredients except broth in heavy frying pan. Cook over medium-high heat 20 minutes, or until almonds are slightly brown. Stir often.
2. Add hot chicken broth; stir. Pour into 2-quart baking dish. Cover tightly with foil. Bake 2 hours.
